Dark Chocolate Espresso Granola Bars

Dark chocolate granola bars

It is hard to eat well while on the go and usually store bought granola bars are packed with sugar and preservatives. I found this recipe in Oxygen magazine and tweaked it a little bit. I have made them previously and thought they need more flavour so I have added peanut butter into the mix. These granola bars are great for a busy student on the go.  They are also a good pre-workout snack. I personally use them to help battle my terrible sweet tooth. I sometimes throw them in the microwave for a few seconds then eat them like a cookie and dip them in milk.

 

 

 

Ingredients


1 cup rolled oats
1/2 cup whole grain flour
2 scoops vanilla OR chocolate protein powder
1 tbs raw honey (I used agave nectar and used two tablespoons instead of one)
2 ounces dark chocolate covered espresso beans (I used plain Hersey’s dark chocolate chips)
1/3 cup canola oil
1/4 cup unsweetened applesauce
1/4 tsp sea salt
1/4 tsp baking soda
1/4 tsp vanilla or almond extract
½  Cup Peanut Butter

Instructions


1. Preheat oven to 325 degrees Fahrenheit
2. Place all ingredients in a large mixing bowl. Mix with a wooden spoon to combine.
3. Spread the mixture evenly in a 9”x9” baking dish. Bake for 25-30 minutes (I only cooked mine for about 10 – 15 minutes). Let cool and slice into 8 bars. Serve OR refrigerate for later.
